Personally, I love beets! My mother used to make the beet recipe that I’m going to share with you today. It’s easy to make and totally delicious. But first, let’s look at why we might want to eat beets in the first place.
Why Eat Beets?
Some health benefits of beets:
1. They are a good source of folate (a B-complex vitamin), which helps support red blood cell production and prevent anemia. It’s also good for pregnant women to help prevent birth defects.
2. They also have thiamin, riboflavin, niacin, potassium, iron, magnesium, phosphorus,vitamin C, vitamin A, and copper.
3. Beets help cleanse the blood, liver, and the entire body.
4. Beets are low in calories and high in nutrients. This is a big plus!
5. They contain calcium and antioxidants that help fight those awful free radicals that can turn into cancer cells.
6. Beets have anti-inflammatory properties.
7. The fiber in beets helps reduce cholesterol and triglycerides by increasing the good cholesterol HDL.
8. The beet greens are also edible, and highly nutritious. They are rich in chlorophyll, protein, calcium, fiber, and have more iron than spinach.
These are just a few of the benefits of beets. Hopefully something in this list will make you want to try them if you haven’t already, or retry them if you have in the past and decided they weren’t for you. Remember to try things you didn’t previously like because our tastes change just like our decorating ideas and hair style.
How to Make Beets
I have made beets many different ways. One beet recipe that is also good is to peel them, cut them into cubes, then toss them with olive oil, salt and pepper and roast at 400 degrees for about 30 minutes or until they’re fork tender. However, my favorite recipe is below. Sorry for no accurate measurements as I like to just put in some of this and some of that and then add more if it doesn’t taste right. Just start with small quantities and add more if you need to.
Ingredients:
Beets, red and/or golden
Extra Virgin Olive Oil
Red wine vinegar
Finely chopped red onion
Salt to taste (I use Himalayan sea salt and not a lot)
Boil the beets until they’re fork tender. Rinse with cold water until they’re warm. This allows the skin to peel right off. See the video below.

Cut into cubes and place in a bowl, with the finely chopped onion. Add the olive oil, red wine vinegar, and salt.
Toss all the ingredients with the beets and enjoy!
