Easy Salads | Clean Eating

My husband and I have easy salads almost every night. I know that many people tell me that they get tired of eating salads, and I’ve decided that it must be because they aren’t making easy salads like we do most nights.

Easy and interesting – definitely not boring.

I think that maybe people don’t realize the diversity of a salad. It doesn’t just have to be lettuce, tomato, and cucumber.

We put all sorts of different foods on our salads. Sometimes we put leftovers from the night before, but whatever is on it, it’s piled high and always has interesting and delicious items.

When I taught school full time I used to take easy salads almost everyday for lunch. Every day people would say to me “what’s in your salad today?” My salads became known as “a Risa salad”

After I quit teaching, I visited my teacher friends and brought them “a Risa salad” one day.

So!! What is a Risa salad?

It’s a salad that has whatever is in the house at the time on the salad. Here’s a list of items that can go on your salad.

Chicken, steak, tuna, salmon, pork, taco meat(ground turkey or beef), cucumber, all types of peppers, cooked eggplant, cooked green beans, broccoli – cooked or raw, cauliflower, mushrooms – cooked or raw, celery, carrots, beets – cooked or raw, quinoa, rice, hemp hearts, craisins, sunflower seeds, almonds, walnuts, pecans, pumpkin seeds, crushed peanuts, oranges, strawberries, apples, blueberries, water melon. 

I don’t think I can even name everything because you can literally put whatever you want on the salad.

Always strive for good lettuce – like romaine, red or green leaf, arugula, or kale. Don’t waste time with iceberg – you won’t find that on a Risa easy salad!

Then just start piling up your salad with whatever you have in the house – pretty much anything will go on a salad!

Make guacamole and use that as your salad dressing, or you can make or buy hummus and use that as your salad dressing.

It’s also really easy to make your own salad dressings! Again these are far easier than people may think. You can make it as easy as just drizzling on some olive oil and red wine vinegar, or make one with more ingredients that you mix up and then store in the fridge for a couple of weeks if it lasts that long.

If you need to take salads to work or on the go, check out the salad in a jar – this is a great idea for work even if you work at home and don’t want to take the time each day to put a salad together – do it once for the whole week! And YES they stay fresh and crisp! >>>> Salad in a jar  

Quick tip for all easy salads:

When you get home with salad fixings – wash and cut up right then. That way all you have to do is pile up the salad during the week. This WILL SAVE you tons of time later.
