Eating healthier is on many people’s minds these days. As winter approaches, eating healthier with easy soup recipes are a must.
The other day we had a cold spell and it made me want to come home and make soup. However, I didn’t really have much in the house to make soup with, but I didn’t let that stop me.
I grew up thinking that soup took all day to make. My mom would get out the big pot, fill it with water and then add stuff to it. It usually came out good except that she didn’t use salt, so it was in need of salt. She did use lots of other herbs and spices, but you need some salt. She would then cook the soup for hours and eventually we’d have great winter soup!

Later in life I learned that if you start by sautéing your vegetables and soup ingredients first, not only will it add flavor, but you can have soup in just around an hour or less. How great is that? So, the other day I came home to see what exactly I had for soup. Yes, I should have stopped at the grocery store to pick up a few things, but do you ever just want to get home? Well, then you know how I felt on this particular day. So, I come home to find I don’t even have an onion! How could I run out of onions? Luckily I have neighbors who have onions!! Hooray for them! And me of course!

So, now I had onions, carrots, butternut squash, black beans and kale. Well, what more do you need?
With those measly ingredients I made soup in around an hour. You can add whatever vegetables you have hanging around. My husband likes to chop the vegetables into itty bitty cubes which I call itty bitties. I like usually chop mine into bigger chunks, often not all even. You do what you like. You can add cooked chicken or mini meatballs too. The point is that soup doesn’t have to be a long and lengthy process. It can be as simple as 1-2-3!
Easy Soup Recipe!
1 onion chopped
3-4 cloves of garlic minced
5-6 carrots chopped
Butternut squash chopped
A bunch of Kale chopped
1 can of black beans
1-2 quarts of vegetable broth or chicken broth OR your own homemade bone broth
Thyme, oregano, whatever other spices you want
Himalayan salt and pepper to taste
1. Heat a dutch oven or heavy pot, add a few swirls of olive oil, add the onion and garlic, sauté for a few minutes.
2. Add the spices, then add the rest of the vegetables stirring occasionally.
3. Let the vegetables get a little soft, then add the broth.
4. Let it heat up then turn it down and let it simmer until the vegetables are fork tender.
5. When the vegetables are done add the black beans and kale.
6. Within a few minutes, your easy soups recipe is done! Add more salt if needed.
I like to make some quinoa and pour my soup over that. It’s that simple. Add whatever other vegetables you like or have around, mushrooms are good too.
