When you buy “healthy granola bars” in the store they’re LOADED with sugar and often other ingredients that you don’t really want to be eating. I already make my own granola, but sometimes you want a bar or just something a little different.
I found this recipe in the Prevention Guide Eat Clean edition from October 2014.
I actually didn’t have and don’t use crispy brown rice cereal so I just used 2 cups of the old fashioned oats. They didn’t come out as hard as I’d like them, so I plan to keep experimenting and see what I can come up with, but they’re quite good! You can try some different ingredients or switch some out like almond butter for peanut butter and try different nuts, pumpkin seeds etc.
Ingredients
1/2 cup honey
1/2 cup natural peanut butter or other nut butter
1 cup crispy brown rice cereal
1 cup granola or plain rolled oats ( used quaker old fashioned oats)
1/2 cup chopped nuts
1/2 cup dried cherries or apricots
What to do!
Melt the 1/2 cup of honey and 1/2 cup of nut butter over medium heat. Stir or whisk to incorporate them.
Mix all other ingredients in a large bowl, pour the honey/nut butter mixture over them and stir to combine.
Lightly grease with coconut oil an 8×8 baking dish or line with plastic wrap or parchment. Spread mixture evenly in dish, pressing down gently, then cover with plastic wrap. Chill until firm, at least 1 hour. Cut into bars. Makes approximately 16.
