If you haven’t tried dates you’re missing out.  The health benefits are many.  These little sweet bites are great if you’re just looking for a little something sweet, or to sweeten recipes.

Benefits of dates:

1.  Fiber – which helps lower your cholesterol, eliminate toxins from your body, and stabilize blood sugar levels

2.  Vitamins and Minerals – Vitamin A, B, Calcium, magnesium, potassium

3.  High in antioxidants and polyphenols

Recipe:

1 cup of pitted dates, medjool are my favorite

2/3 cup of boiling water

Pour boiling water over the dates and let them hang out for 30 or more minutes.  Process into a smooth paste in the food processor.  Place in a jar in the frig for at least a week. I’ve had mine in there for 2 weeks and it’s fine. You can also freeze it.

Use this to naturally sweeten your plain greek yogurt, in baked goods like muffins and cakes, and you can use it in puddings too.
