How To Make Kale | Clean Eating

I get asked all the time how to make kale. Actually how I make MY kale. I eat kale at least twice a week, but often sometimes daily. I usually vary the type of greens we eat sometimes having kale(all different varieties), swiss chard, or collards. I almost always make them the same way. WHY? Because they always turn out great and it’s easy.

If you have your onion cut up ahead of time and your greens washed, then all you have to do it cook them. Pretty quick and easy.

Why eat kale and other greens? Because it’s packed with protein, fiber, folate, calcium and tons more – these need to make it to the top of your food list. Greens are packed with vitamins, antioxidants, and disease fighting phytonutrients. Greens have fiber which can help lower cholesterol, blood pressure, and help slow the absorption of carbohydrates into your blood stream after you eat. This means that it helps you not to have sugar spikes, which lowers your risk of cardiovascular disease and type 2 diabetes.  You want this in your life!

Here’s my quick video – but note, sometimes I add garlic – I think I forgot on this day though, you can also add herbs if you like, but to me they’re always great just how they are with the himalayan pink salt.

I also love this recipe – no measurements as you just need to taste it and add more pesto if you think it needs it.


Pesto – I use the one from Costco as it has good ingredients (NO canola oil)



Olive oil

Himalayan Pink Salt

Quinoa – 1 cup or less depending on how much kale you have

1. Heat pan to medium and add the olive oil, you can also add some coconut oil too – I’m finding that mixing them gives it a buttery flavor.

2. Add onions and cook until just tender, then add the kale and wilt – don’t over cook it.

3. Turn the heat off or down to low, and add the pesto and mix with the onions and kale, then add the cooked quinoa and mix and mix and mix. Add more pesto if needed and you can add more quinoa if you need.
