Turkey Chili Recipe

This Turkey Chili Recipe is great on a cold rainy day – or just a cold dreary day.  It came about because we didn’t have a lot in the house and it was one of those days.

We also had eggplant that needed to be used – eggplant in chili??? It was SO good!!

Never underestimate what will taste good. Never judge before you try it. 

So here is the turkey chili recipe!

Ingredients:

2 lbs turkey

1 big onion – chopped

1 good size eggplant- cut into cubes

4 gloves of garlic and a shallot

chicken broth

1 leek chopped up – make sure you clean it really well

sweet potato or white potato

chili powder and cumin, salt and pepper

What to do for the turkey chili recipe!

Brown the turkey until cooked, then add the onion, garlic, shallot, leeks, and eggplant, chili powder, cumin, salt and pepper,  and any other spices you like in your chili.  Brown all of these really well – the eggplant should be cooked down, add some chicken broth if it’s getting a little dry. Once it’s nicely cooked down add kidney and black beans and some more chicken broth. You don’t want it to be like soup. No I didn’t measure how much I put in. Cook a little bit more, then about 20 min before eating, chop up some kale and spinach and add that too. Serve hot with a side salad or tortilla chips – healthy one! 🙂
